The perfect marriage of chocolate, coffee, cream, and sponge cake.

This multi layered cake was invented by Gastón Lenôtre in the 50’s as an homage to the Ópera Garnier París theater. The rectangular shape and the colored layers emulate the famous theater.

The cake is comprised of several thin layers of almond sponge cake. The sponge cake is soaked in coffee syrup, which ensures the cake is always moist and flavorful.

In between the sponge cake layers you will find alternating layers of chocolate ganache and coffee buttercream. The cake is then glazed and adorned with fine chocolate.

If you hate dry, boring cake, you will love the Opera. It takes a stand against dry cake!

For this reason, the layers are purposely thin. This is so that the flavors stack up and create a unique combination of soft, creamy, chocolatey, and moist cake.

The confection of this cake is truly a labor of love. There are many elements that have to come together. The layers are thin and delicate. Making it at home would be a monumental undertaking.
