Macarons, the almond cookie sandwich that became trendy

Colorful, pillowy and delicated flavor, they are present in all sort of celebrations, from weddings to First Communions, Baby Showers or Bar Mitzva. They are very popular in dessert tables and commonly used to create complex food decorations.

One of the macarons features that make them most versatile and attractive are the multiple colors, flavors and fillings that they admit. Allowing being used in many types of décor, presents and special events. Macarons are perhaps one of the most famous and treasured French desserts. But how this cookie sandwiches bursted into our modern life?

According to Wikipedia macarons have been produced in the Venetian monasteries since the 8th century A.D. During the Renaissance, French queen Catherine de’ Medici’s Italian pastry chefs made them when she brought them with her to France in 1533, upon marrying Henry II of France.

Theculturetrip.com relates that in 1792, two Carmelite nuns in Nancy baked and sold macarons in order to survive during the French Revolution, and they became known as the ‘MacaronSisters.’ However, the macaron as we know it today was a creation of Parisian confectioners, who introduced the ‘Macaron Parisien,‘ which was popularized by the famous company of Louis-Ernest Ladurée, created in 1862.

At the beginning of the 21st century, confectioners started offering macarons with different flavors between filling and cookie, and recently, famous pastry chefs have been revamping the traditional macaron using salty and savory inspirations.

But a turning point of this story was the film Marie Antoinette, directed by Sofia Coppola in 2006, in which the queen appears surrounded by luscious pyramids of multicolored macarons. Since then, macarons have experienced a burst of popularity.
